Do-ahead salad for large group

We have a school related bbq to go to, they supply meat, bread etc and families are asked to contribute a salad or sweet.


I want to take something that’s interesting, fresh & tasty, more than just a leafy greens type thing; and able to be prepped the night before ideally so I can just throw together and dress it in a few minutes. I’ll be absolutely running to get from work to collect kids, get home, grab said salad and DH and head back to school in time.

The past couple years I’ve done a green bean and avocado salad with mustard dressing which is my go-to but is tricky to do quickly.


I’d love to hear any ideas? 🙏

I’ve never bothered with the pomegranate. Keep the nuts and seeds and herbs separately and put together just before to keep them crunchy. If nuts are a no then just up the amount of pumpkin seeds.

Phew to no pomegranate tho, the chances of getting one out here is pretty slim!

Oh that looks yum - should have checked Nagi! My fussy DH and kids would object to the pumpkin 🙄 but will bookmark that one, the dressing recipe sounds delicious.

I made a version of this last year, and everyone who tried it liked it (I didn't like try it as I don't like many of the ingredients). Only instead of just black beans I used the tinned Mexican mix instead.

This is a really nice potato and herb salad. I have made it a few times and it is a good do ahead type one because I make it 100% ready the night before and have it in the bowl I am planning to serve it in, in the fridge covered with gladwrap.


It travels well if you need to take it somewhere and at serving time all you do is take the gladwrap off and put in on the table. It's best made the night before anyway, as the flavour is much better the next day.
