The perfect birthday cake... but.

Hopefully eb can help.


Eldest is having a birthday. Yay! Kiddo has very restricted eating. Vanilla cakes ok. His favourite cake is the greens vanilla mud cake mix. Needs two eggs and oil and water.


A friend of his is allergic to eggs and peanuts.

I need a cake that will be edible for both kids. Thanks.

Do the cake for your son, then do a batch of cupcakes as well that are suitable for the friend. Most kids would be happy to just grab a cupcake, quicker than cutting a cake,

Make the cake using Orgrans No Egg egg replacement. Might not be quite as nice but it’ll be pretty good.

Use apple purée, flaxseed in water or another egg replacement. I do that for my nephew and have never had a problem. It’s the only time I use a packet mix- they do fine without egg.

Use the liquid from chickpeas in place of the egg. Same consistency and you can't taste the difference


I found the orgran no egg to leave my cakes so crumbly that I couldn't even remove then from the spring form tin in 1 piece

I haven’t been able to source Orgrans egg replacer for a year. I use 50/50 chia/flaxseeds ground up. 1 Tbsp mix + 3 Tbsp water = 1 egg.


I use this in all baking provided you don’t require the ‘eggs’ to be beaten for volume.

My son is allergic to egg. I find egg replacer (orgran, available from the health food shop) works fine with anything requiring two or less eggs.

I assume you've checked but if not it would be worth checking if the friend is allergic to baked egg - my son is allergic to egg but can tolerate it in baked goods, like cakes, muffins etc.

I was in the same boat. There is a nearby bakery that specialises in allergy, celiac etc cakes.

It wasn’t that expensive and I didn’t have to worry about creating a flop.

I’d be a little cautious of this with a peanut allergic kid (check with the parent), as my son is also allergic to other legumes (chickpeas and lentils are the worst).

The Apple purée & baking powder works perfectly as a replacement for a packet mix (have done it several times due to running out of eggs!).



But check with the parents, if the kid is anaphylactic to peanuts a lot of times the kids come with their own lunchbox & a commercially prepared treat is preferred (like a freddo frog).

I always make chocolate, but think it would be fine without the cocoa. Just use a neutral oil (not evtra virgin olive oil).

 

Just wanted so bump this thread with a huge thankyou. I bookmarked this recipe as soon as I saw it ready for my daughters birthday. I finally made it today, it came out a bit flat (as most Eggless cakes do) so I made two and plan to sandwich them together with blueberry Chia jam.


Until now I've been using the greens box mix which can be made egg and dairy free but this was way easier and looks like it won't be as dense (not that I mind the fudgy denseness).
