Someone Posted March 21, 2021 Share Posted March 21, 2021 I love a quinoa salad with a bbq - this is similar to the one I make, but I don't include the mint, add spring onions, kalamata olives and crumbled feta. For the dressing, I just use plain extra virgin olive oil and add the lemon juice and a teaspoon of dijon mustard. Coleslaw in a vinegarette.Roasted beetroot, pumpkin, feta, green leaves (spinach or rocket or kale) salad with whatever added in - usually nuts of some description or olives or tomatoes etc. Lentil salad with feta, pomegranates and mint is nice too. And plain salad veggies cut up separately for the children who don't eat dressings nor mixed in food. Dessert is low on the list of priorities, usually everyone is too full. Though kids will ask for marshmallows or chips. A good starter is always veg, crackers with hummus and if we haven't put feta in salads (though who am I kidding, even if we have lol) there's a super delish lemon feta dip that gets devoured by any feta lover around.
